Ingredients:
For the Wings
4lbs Chicken Wings
1 1/2 tsp Salt
1 1/2 tbsp Baking Powder (NOT BAKING SODA!!!)
1 tbsp Oil or use an Oil Spray
Honey Garlic Sauce
4-5 cloves Garlic, minced
1 tbsp Ginger, minced
1 tbsp Butter
1/2 cup Low Sodium Soy Sauce
2 tbsp Brown Sugar
4 tbsp Honey
2 tsp Sesame Seeds
2 tsp Corn Starch
Green Onions, sliced
Garlic Parmesan Sauce
1/2 cup Mayonnaise
2 cloves Garlic, minced
1/4 cup Parmesan Cheese, freshly grated
1/4 cup Parsley, finely chopped
1 tbsp Lemon Juice
1 1/2 tsp Garlic Powder
Salt & Pepper
Buffalo/Hot Butter Sauce
1/4 cup Unsalted Butter, cubed
1/2 cup Franks Hot Sauce
2 tsp Honey
Method:
Pat dry the chicken wings with paper towels. Place as a single layer on a baking sheet. Sprinkle the salt over the chicken wings to help draw out moisture. Let sit for 3 hours uncovered in the fridge to dry out. This helps in achieving that crispy skin. (If you are short on time, make sure you pat the wings super dry with paper towels)
Preheat the oven to 250 degrees F. Grease the baking tray with oil. Place the wings in a large bowl and toss in the baking powder. Make sure every single wing is evenly coated in the baking powder. Place as a single layer on the baking sheet. Bake on the middle rack for approximately 30mins.
Increase the oven temperature to 450 degrees F and bake for another 35-45mins.
To make the Honey Garlic Sauce, melt the butter in a small saucepan over medium heat. Add the garlic and ginger and cook for a few minutes. Add the honey, brown sugar, soy sauce and sesame seeds. Let it come to a boil, then add the cornstarch and mix until the sauce has thickened. Transfer to a bowl. Garnish with green onions.
To make the Garlic and Parmesan Sauce, add all the ingredients to a small bowl and mix well to combine. Add salt and pepper to taste.
To make the Buffalo/Hot Butter Sauce, melt the butter in a small saucepan until foamy. Add the hot sauce and mix. Do not let it come to a boil. Once it is at a gentle simmer, add the honey and stir to combine. The honey helps to reduce the sourness. Once heated throughout, transfer to a bowl.
Once the wings are cooked, let it rest for at least 5mins in the baking tray before trying to remove them.
Toss the wings in the sauce of your liking.
