Spaghetti Aglio e Olio (Garlic & Oil)

Ingredients:

  • 1lb uncooked Spaghetti

  • 8 cloves Garlic, thinly sliced

  • 1/3 cup Olive Oil

  • 1 tsp Red Pepper Flakes (optional)

  • 1/2 bunch Flat Leaf Italian Parsley, finely chopped

  • Salt

  • Parmesan Cheese, freshly grated


Method:

  1. Bring a pot of heavily salted water up to a boil. Add your uncooked pasta noodles and boil for approximately 10-12 minutes, until al dente (to the bite).

  2. Reserve about 1/2 cup of pasta water before straining. Set it aside.

  3. In a large skillet over medium high heat, add the olive oil and the garlic. Roast lightly for a couple minutes until the garlic is really fragrant. At this point you can add the red pepper flakes, if you desire.

  4. Add your spaghetti to the pan and toss in the garlic oil. Add a good grating of fresh parmesan cheese. Pour the reserved pasta water into the pan to help combine the pasta with the oil.

  5. Add in the parsley and give it a final mix. Taste and adjust the seasonings accordingly.

  6. Serve & enjoy.
