Fudgy Brownies

Ingredients:

  • 3/4 cup Unsalted Butter, cubed

  • 2 cups Sugar

  • 3 Eggs, room temperature

  • 1 tsp Vanilla Extract

  • 1 cup Cocoa Powder, sifted

  • 1 cup All Purpose Flour

  • 1 tsp Salt

  • 8 oz good quality Semi Sweet or Dark Chocolate Bar, chopped

  • 1/2 cup roughly chopped Pecans

  • Vanilla Ice Cream (Optional)

  • Caramel Sauce (Optional)

Method:

  1. Preheat the oven to 350 degrees F. Line a 9x13-inch pan with parchment paper.

  2. Add some water to a small saucepan and simmer over low heat. Place a medium sized heat proof bowl on top to create a double boiler. To the bowl, add the butter and 2 oz of chopped chocolate. Mix constantly and remove from the heat once all melted. Let cool for a few minutes at room temperature to prevent potentially scorching the eggs.

  3. Once the melted chocolate and butter mixture is slightly cooled, whisk in the sugar, eggs, and vanilla.

  4. Add the cocoa powder, flour, salt, 4oz of chopped chocolate and half of the pecans. Fold the ingredients into the mixture. Once all combined, spread it evenly into the prepared pan.

  5. Sprinkle the remaining 2oz of chopped chocolate and pecans on top of the brownie batter. Place it into the oven and bake for approximately 25-30 minutes. Test with a toothpick to check if it is done, it should come out with a few wet crumbs.

  6. Let the brownies cool in the pan for at least 15 minutes before transferring to a cutting board. Cut the brownies into equal sized squares with a sharp knife.

  7. Serve warm with a scoop of vanilla ice cream and caramel sauce drizzled on top for the ultimate restaurant experience. Or enjoy them on its own, its equally delicious.
