a.k.a. The best cookie you'll ever eat
Ingredients:
1 cup Unsalted Butter, cut into 1 inch cubes
1 cup Brown Sugar
1/2 cup White Sugar
2 Eggs
1/2 tbsp Vanilla Extract
1 tsp Baking Soda
3 tsp Cornstarch
2 cups All Purpose Flour
1 1/2 cups Semi Sweet Chocolate Chunks or Chips
1/2 cup Toffee Bits, or crushed Skor
3/4 cup Pecan Pieces
Sea Salt
Method:
In a medium saucepan over medium-low heat, add the butter and melt. Stir and cook for approx 5mins or until it is aromatic and nutty. The milk solids should separate and turn a deep golden brown colour. Transfer to a bowl and let it cool.
In a large bowl, add the brown sugar, white sugar and browned butter. Whisk to combine. add the eggs and vanilla. Mix until incorporated.
Add the flour, baking soda and cornstarch. Mix until you can no longer see bits of white from the flour.
Mix in all the toppings. Cover the bowl with plastic wrap and place it in the fridge for a minimum of 1 hour.
Preheat the oven to 350 degrees F. Line your cookie sheets with parchment paper.
Using a cookie scoop, evenly distribute the cookie dough. Press extra toppings on top of the cookie if you have any left over.
Bake for 10-12mins. While they are warm, sprinkle some sea salt on top, then transfer to a cooling rack.
