Oatmeal Raisin Cookies



Ingredients:


  • 1 cup All Purpose Flour

  • 1/2 tsp Baking Powder

  • 1/2 tsp Salt

  • 1/2 tsp Cinnamon

  • 3/4 cup Unsalted Butter, room temperature

  • 1/2 cup Granulated Sugar

  • 1/2 cup Brown Sugar

  • 1 tsp Vanilla Extract

  • 1 Egg

  • 1 1/2 cup Large Flake Oats or Old Fashioned Oats

  • 3/4 cup Raisins


Method:


  1. Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.

  2. In a bowl, whisk together the flour, baking powder, salt and cinnamon. Set aside

  3. In a larger bowl, cream together the butter and both sugars using a handheld electric whisk, or stand mixer fitted with the paddle attachment. Mix for 3 minutes, until light and fluffy.

  4. Add the egg and vanilla to the butter and mix.

  5. Slowly add the flour mixture, scraping down the sides of the bowl as needed.

  6. Once the flour has been fully incorporated, add the oats and raisins and till until combined.

  7. Using a cookie scoop, evenly distribute the cookie dough, leaving a 2-inches between each cookie.

  8. Bake in the oven for approximately 12-15mins, keeping at eye on them at the 12min mark.

  9. Let cool for 5-10 minutes before serving. Enjoy :)
