Ingredients:
1 Rack Pork Ribs
2 tbsp Maple Syrup (can be substituted with 2 tbsp Brown Sugar)
1/2 tbsp Paprika
1 1/2 tsp Cayenne Pepper
1/2 tsp Onion Powder
1 tsp Chilli Powder
1 tsp Garlic Powder
1 tsp Oregano
1 tsp Mustard Powder
1 tsp Salt
1 tsp Black Pepper
1/3 cup BBQ Sauce (My favourite is Bull's Eye Guinness Beer Blend)
Method:
Preheat the oven to 325 degrees F.
Trim away all excess fat on on the rack of ribs. Turn it over and pull away the thin layer of membrane, starting from the first bone. Depending on the rack, you can get lucky and remove it in one pull, or it can be tricky and take several tries to get a good grip. Use a towel to pull it off if you can't get a good grip on it. Once removed, brush the maple syrup all over the ribs, front and back.
In a small bowl, mix together all of the dry spices. Sprinkle the spice blend all over the ribs and massage it in.
Prepare a baking tray by lining it with a large piece of aluminum foil and parchment paper. Make sure there is enough to wrap the ribs completely.
Place the rack of ribs on the tray and wrap it in the foil and parchment paper. Bake in the oven for 2 hours and 15 minutes.
Once cooked, remove the ribs from the oven and unwrap carefully. Preheat the BBQ or grill.
Brush one side of the ribs with the BBQ sauce. Place the ribs sauce side down on the grill and cook for 3-5 minutes. Brush the other side of the ribs with sauce and flip. Cook for another 3-5 minutes.
Serve warm & enjoy.
